This is just something fun I wanted to do, as I love to cook and try out new recipes. (High Quality food pictures incoming)
My version of Kachumbari, a fresh tomato and onion salad popular in East Africa, particularly in Kenya (where it gets its Swahili name), but also in Tanzania, Rwanda, Burundi, and Uganda. Sort of like pico de gallo, but often used as a side-salad instead of just a garnish
My version of Viazi Karai, (“potato fritters” or “potato bhajia” in Swahili) a Kenyan street food that is especially famous in the coastal region of the country.
Uugala is my version of Ugali, a polenta-like side-dish from Kenya and Tanzania. Also known as corn fufu. It is generally placed on a platter in the middle and everyone takes a bit and enjoys it. You take it with your hands instead of a fork or spoon, and roll a little lump into a ball, then make a depression in the middle with your thumb and use it to scoop stew.
