Uugala

Uugala is my version of Ugali, a polenta-like side-dish from Kenya and Tanzania. Also known as corn fufu. It is generally placed on a platter in the middle and everyone takes a bit and enjoys it. You take it with your hands instead of a fork or spoon, and roll a little lump into a ball, then make a depression in the middle with your thumb and use it to scoop stew.

10 min cook time, makes 2 servings

Ingredients

  • 1 cup corn meal/maize meal

  • 2 cups water

  • Butter 1tbsp

  • 1/2 teaspoon salt.

Instructions

  • Heat water over medium heat in a deep pan with a handle

  • Sprinkle about 1 tbsp of the maize meal when the water comes to a boil

  • Add the main meal or cornmeal and keep on stirring with a wooden spoon.

  • Keep stirring and pressing the mixture against the side of the pan to break up the lumps as it becomes thicker, and the mixture will begin to come away from the sides of the pan.

  • Add butter and salt

  • Allow it to cook for 2-3 min after that

  • Transfer to a platter from the pan and then place a platter and turn upside down

  • Or you can transfer to a small heatproof bowl and pat it down to shape.

  • Enjoy the ugali with your favorite stew or curry.

Variations

  • Prepare it just before you have your meal

  • For a softer consistency, add 1/2-1 extra cup of water

  • Add paprika into the mixture

  • Add scallions to the mixture.

  • Add little bits of garlic to the mixture.

  • Goes great with Kachuumbrai, or raw greens like cassava leaves.

  • Use sorghum or millet (milk can also be used here)
